Rară Neagră

The vineyard of only 2 hectares was planted in 2018, located on the right bank of the lower Dniester near the village of Cioburciu, Stefan Voda, in the famous Purcari area.

Winemaking:

100% selective manual harvest, in 10 kg boxes.

 Pre-cooling of grapes to +7 ゚C. Cryomaceration of the must for 4 days, after desteeming.

Fermented in stainless steel vessels, at average temperatures of 22 - 25 ゚C with a mix of indigenous and selective yeasts.

20% of the wine aged in new Carpathian (Transylvanian) oak barrels for 6 months. 80% of the wine vinified and kept in stainless steel for 6 months.
