In this wine we wanted to highlight its strongly pronounced fruity style with beautifully expressed apricot, white peach and melon amidst citrus notes. These tastes are completed with creamy texture, creme brulee and delicate oakiness.
Chardonnay
Vineyard and vinification.
For our 2019 Chardonnay, we limited the yield per hectare down to 6 tons. This ensured exceptional ripening of the grapes, even and free from any losses of the desired style of future wine.
We managed to finish harvesting before the beginning of incessant autumn rains, completely avoiding rot.
Selective manual harvesting of grapes into 15 kg crates and its further cooling down to 0 - +3 degrees eliminated the risk of spontaneous and uncontrollable processes and to a certain extent it also concentrated aromatic precursors in future wine.
Fermentation was conducted in stainless steel containers in contact with quality oak staff. For our 15% Chardonnay 2019 we performed malolactic fermentation for more complex and structured taste. This was followed by 5-month ageing of the whole batch on fine lees (sur lie).
Plantation and terroir
The plantation is located in the south-east of Moldova, in the valley of the Dniester, near Talmaza township,
IGP Stefan-Voda (region with protected geographical status).
It is located mostly on slopes with eastern and south-eastern direction, in close vicinity to the Dniester. The distance from the Black Sea is 70 km.
The climate is moderately continental, but due to the proximity of the Black Sea, warm and damp Mediterranean air masses pass through it. During the ripening period, average day temperature estimates 25 degrees with 12 degrees at night, which results in lengthier and better-quality grape ripening.
